- SOURCE: Not only do we source cacao for this bar from the Ba Ria Province located just East of Ho Chi Minh City, But we also found the ginger and lime here as well! The Cacao in Ba Ria in the shadeof jackfruit, pomelo, water apples and black pepper.
- FLAVOR: Sourcing our Ginger Lime and Cacao from the Ra Ria provience gives this bar a sence of place. The bright ginger and lime pair perfectly with the Ba Ria cacao's bright citrusy flavor.
- SINGLE ORIGIN CHOCOLATE: Our Single Origin chocolate bars are made with cacao sourced from six provinces in southern Vietnam. The climate, soil, and water of each province (call it terroir if you want) as well as the mix of cacao varieties and post-harvest practices contribute to the different flavors of each origin, which in turn make the different flavours of each bar.
- BEAN TO BAR MANIFESTO: In 2011, when we came up with the peculiar idea to make chocolate using only Vietnamese cacao and to manufacture it in Ho Chi Minh City. We had never heard the term, "bean-to-bar", but we soon did and all of a sudden felt like we were part of something larger than just creating a local food business. We roast the cream of each crop of Cacao in small batches.
